A new all-in-one lifestyle destination is here to shake things up in Singapore's crowded F&B scene.

Founded by the same folks behind the now-defunct Catalunya and Ku De Ta Singapore, VLV is housed in a 20,000 sq ft double-storey conservation mansion in the heart of the bustling Clarke Quay. 

Marrying an old-world oriental charm with modern sophistication, the space exudes a hip club-like feel, anchored by a Fire and Water Court with an open-sky roof feature that allows natural light to stream in.

Planners can choose from VLV's four concepts: the alfresco courtyard and riverside dining that overlooks the Singapore River; the 400-pax Club Lounge with a dance floor and music headlined by rising DJs; and finally, the signature 146-seater Chinese restaurant on the second floor, which comprises three private dining rooms that accommodate up to 36 each.

Bringing his wealth of culinary experience in Cantonese cuisine to VLV is renowned Singapore chef Martin Foo, previously from Tung Lok Group. Here, he showcases a creative mastery of Chinese dishes with a touch of quality Japanese and Western ingredients. 

My favourite dish from the media tasting was Chef Foo's Kagoshima Kurobuta Char Siew, which was beautifully charred on the outside, and lightly marinated with honey. The dish is served with a fermented black bean dip, which adds a unique touch to this classic Chinese dish. 

Also equally enjoyable were the Claypot Prawns with Vermicelli that soaked up all the umami goodness of the crustacean; the Kimchi Seafood Fried Rice, made fragrant with the addition of 'hei bi' (dried shrimp) and a hint of kimchi; as well as the Crispy Seafood Roll, which offered a twist on the Hong Kong rice roll with 'you tiao' (Chinese doughnut).

Try out Chef Foo's creations with the restaurant's recently launched lunch sets: the 'Creations' Lunch Set (S$48++ / min. two persons); 'Tasting' Lunch Set (S$98++ for four persons); and 'Signatures' Lunch Set (S$138++ for four persons), available on weekdays from 12-3pm.
