Modern Chinese, sharing plates, sleek interiors at the new Madame Fan

JW Marriott Singapore South Beach has welcomed its latest F&B concept, Madame Fan, serving modern Chinese cuisine in an unconventional setting.  

The restaurant is famed restaurateur Alan Yau's first Southeast Asian venture, and one of four new concepts that mark the reopening of Singapore iconic NCO Club as an entertainment lifestyle destination.

Guests arrive at the restaurant through a non-descript entrance enclosed by The NCO Club's "solid masonry-faced façade" and are greeted by interiors that feature restored luxurious Italian marble and photographs chronicling the history of the location, before being whizzed up to the main dining venue on the second floor.

The 467 square-metre, 222-seater restaurant will launch an "etiquette-free lifestyle dining concept grounded in Old School Classics, delivering a dining experience unique to its traditions and heritage, yet unbounded by the rigidity of current European dining standards," according to a media release. 

"Fine dining goes beyond the food on your plate. Beyond the craft, it is about service and ambience and how these elements come together to deliver an experience that connects with the deepest level of our being. It is about creating an experience that is extraordinary and unforgettable," explained Alan Yau.

At the restaurant, dishes are presented as sharing plates and signatures include: Drunken Crab Rice Noodle with 20-year Gu Yue Long Shan Rice Wine, Lobster Cantonese with Ginger, Spring Onion and Wonton Noodle and Handcut Taiwan noodle, Wind Dried Pork with La La Clams. 

Curated by head sommelier Fabien Duboueix, the extensive wine list features Old World selections and Grower Champagnes, along with classic cocktails and coffees with an Arabica flavour profile. 

Madame Fan features a lounge (30 pax), a main dining area (100 pax), five private dining rooms (50 pax) and one VIP private dining room (12 pax).
In addition to Madame Fan, The NCO Club will also house a live music venue, champagne and oyster bar, as well as a private wine room. 

There is a unique for-hire events venue, The Britannia Room, spanning 72 square metres and hosting a capacity of up to 50 people on the third floor of the three-storey clubhouse.
