The Calyx at the Royal Botanic Garden Sydney has unveiled its latest exhibition, "Alchemy of a Rainforest", featuring a glowing cocoon canopy, rare flora, and the Southern Hemisphere's largest green wall. Laissez-faire Catering marked the occasion with a VIP launch for 400 industry professionals.
Sara Flaksbard, general manager of Laissez-faire Catering, said, "We designed the event to be an inspiration for what the planners could do to bring their events to life. The new exhibition gives the space an entirely different feel, and paired with the sustainability principles weaved through the exhibition and menu choices, the possibilities for creating meaningful and memorable events are limitless.”
The menu, deeply connected to the rainforest theme, showcased Laissez-faire's commitment to sustainable practices. Highlights included Gin & Sage Salt Cured Lamb, Black Sesame Seared Ahi Tuna, and vegan options like Roasted Eggplant & Tahini Panna Cotta. A standout dessert featured a chocolate bar inspired by rainforest earth tones.
"We're passionate about offering menus that reflect the cultural, natural, and artistic aspects of The Calyx, whether through sustainable produce or partnering with Indigenous suppliers to create recipes and bring flavours to life,” Flaksbard explained.
The "Alchemy of a Rainforest" exhibition blends art, innovation, and sustainability, offering a unique backdrop for events. Laissez-faire Catering provides tailored menu options, including collaborations with Indigiearth for menus featuring traditional First Nations stories.
