How Sydney’s convention centre is cooking with sustainability in mind

Menus for 2023 are showcasing low-carbon options from local suppliers in the New South Wales region.

International Convention Centre (ICC) Sydney is making sustainability the central focus of its food and beverage offering in 2023.

The venue has released its menus for 2023, developed by its in-house team, which will enable event organisers to make more sustainable and diverse food choices across six core menus. There will be a choice of 186 low carbon options from the breakfast, lunch, plated, canapé, morning tea, afternoon tea and Indian feast menus.

Geoff Donaghy, CEO and group director at ICC Sydney said that the latest menu offers event organisers another avenue to make a positive difference to the environment and community, while also supporting First Nations-owned [indigenous] businesses.

He said: “ICC Sydney’s culinary team has selected the highest quality fresh and seasonal produce to create world class dishes that have been reviewed to estimate the carbon footprint associated with the farming, harvesting, production, and transportation of ingredients.”

Donaghy added that the ICC’s new menus would ensure the venue upholds its support of the Exhibition and Event Association of Australasia’s Sustainable Events 2030 Pledge and the Joint Meetings Industry Council’s Net Zero Carbon Events Pledge.

The new menu collection has a similar drinks offering with the venue offering a 100% local wine list. It takes guests on a gastronomic tour of New South Wales, with more than 130 local producers across the supply chain, celebrating the diverse flavours of the region.
