F&B: Hawaiian cuisine makes a splash in Shanghai

Chef Alan Wong's much-anticipated Alan Wong's Shanghai has officially opened its doors. The Hawaiian chef's venture is located in one of Shanghai's most upscale business hotels, The Portman Ritz-Carlton, meaning the restaurant is well positioned to cater to small business gatherings and intimate functions.

The restaurant has four private dining rooms that each have a different theme inspired by Hawaii. The themes - Water, Land Sun and Ohana, a Hawaiian concept of strong family bonds - are illustrated with images from famed Hawaiian photographer John De Mello. The four rooms can accommodate anywhere from four to 14 guests.

Although Wong specialises in Hawaiian regional cuisine, he aims to bridge the gap between Hawaii and Shanghai by drawing inspiration from local culture in his culinary creations which include fusion dishes such as five-spice Iberico pork loin medallions with Hainanese yellow chilies and twice-cooked slow braised short ribs with ginger prawns.

The restaurant is clad in wood paneling, which mimics the soft sandy beaches of Hawaii, while the Sunset Lit Raw Bar has a calming Hawaiian sunset backdrop.

Alan Wong is set to open another restaurant at Studio City Macau by the end of the year.
